Fluffy red velvet chiffon sponge paired with a floral salted cherry blossom purée & rosewater infused cream
Cherry blossom season is in full bloom in Japan and the buds are preserved in salt and Umé vinegar by Japanese farmers and flown to our shop. As the buds taste floral but quite salty, so to balance well inside a cake, we gently rinse then soak these buds in rosewater which balances the salt with fragrance and sweetness - Stella x
